Our Mai Tai Cupcakes made with Betty Crocker SuperMoist yellow cake mix and brushed with a rum-infused glaze are full of the tropical flavors of the islands.

Ingredients

Cupcakes

1 box Betty Crocker™ SuperMoist™ yellow cake mix
3/4 cup pineapple juice
1/2 cup vegetable oil
2 tablespoons orange juice
2 tablespoons lime juice
3 eggs

Rum Glaze

2 tablespoons powdered sugar
2 tablespoons butter, melted
2 tablespoons spiced rum
2 tablespoons coconut rum

Frosting

1/2 cup shortening
1/2 cup butter, softened
1 box (1 lb) powdered sugar (4 cups)
1/8 teaspoon almond extract
1/8 teaspoon coconut extract
3 to 4 teaspoons milk

Garnish

24 maraschino cherries with stems, if desired
