Ingredients for Meringue with Fresh Fruits 

 

For the meringues: 

 2 large egg whites 

 ½ cup granulated sugar

 

For the filling :

250 grams mascarpone cheese 

150 ml. heavy whipping cream 

1 teaspoon of vanilla extract

 

For the topping:

fresh blueberries

fresh raspberries

fresh strawberries 

pomegranate seeds 

any other desired fruit you like to use

 

How to Make Meringue with Fresh Fruits 

 

Preheat your oven to 275 F or 140 C degrees.

 

In a large mixing bowl, combine together the egg whites and granulated sugar, mixing well until stiff peaks form. Mix for about 10 minutes until all of the sugar is dissolved. With a spoon, transfer the meringue into the baking tray lined with parchment paper and form the little meringues making a little dollop in the middle of each. Bake for about 30 minutes and let them cool completely before frosting them.

 

In a large mixing bowl, combine together the mascarpone cheese and heavy whipping cream alongside with the vanilla extract. Mix well until fully incorporated and soft peaks form. Transfer of the filling in each of the cooled meringues and decorate with fresh fruits. You can make either mini meringues or one big Pavlova cake out of this recipe.
