This is one of those wonderful carrot cake recipes that is moist and has that distinctive cream cheese frosting that is found on the carrot cake which does complements this cake so well , I love this recipe because it uses alternative sugar great for everyone who wants to cut down on sugary foods but still want to have their cake .. happy baking
