Cheery Cherries Jubilee
1 pound frozen sweet cherries
3 tablespoons sugar
1 tablespoon cornstarch
½ teaspoon grated orange rind
½ cup orange juice
½ cup water
¼ cup brandy
vanilla ice cream
Thaw cherries and set aside. In a medium-sized saucepan, combine 3 tablespoons sugar, 1 tablespoon cornstarch, and ½ teaspoon orange rind. Add ½ cup orange juice and ½ cup water and stir well. Bring to a boil over medium heat, stirring constantly. Add thawed cherries, reduce heat to low, and simmer 10 minutes, stirring occasionally. Remove from heat. Pour ¼ cup brandy over the entire surface of the hot cherry sauce. Ignite with a butane lighter or long fireplace match. Stir until flames die down. Serve immediately over scoops of vanilla ice cream. YUM!

There are many special days that celebrate different types of food but it is quite rare to find a day that is devoted to just one particular dish. Cherries Jubilee Day is set aside to celebrate a dessert that takes cherries and turns them into something spectacular. Fresh cherries are cooked in a sweet sauce into which warmed liqueur, usually kirsch or fruit brandy, is mixed and set alight before being spooned over a chilled bowl of vanilla ice-cream while still burning with a blue flame.
This show-stopping flambéed dish is credited to the famous chef, Auguste Escoffie, who created it for the 1897 Diamond Jubilee celebrations of Queen Victoria. Cherries Jubilee became a big hit across the Atlantic and was a favourite in American restaurants of the 1950s and 60s. Today it has come back into fashion and Cherries Jubilee Day is the ideal time to discover this dramatic and delicious dish
