FOR THE BASE

Ingredients

• 250 g packet digestive biscuits
• 125 g (4oz) unsalted butter

FOR THE FILLING

Ingredients

• 1 large unwaxed lemon

• 2 x 250 g tubs curd cheese

• 142 ml carton soured cream

• 2 medium eggs

• 175 g (6oz) golden caster sugar

• 11⁄2 tsp vanilla extract

• 1 level tbsp cornflour

• 50 g (2oz) sultanas
