Love To Make This Chocolate And Blackberry Meringue Roulade

I really love this roulade as I have been looking for a recipe that I can use blackberries in so when I came across this recipe for a chocolate and blackberry meringue roulade it just seemed the right recipe to make and to share on to you guys so that you can make it too

I have a fair few blackberries in my freezer that I picked last year so this recipe will be ideal as seeing as family are here at the weekend I think I will make this for dessert

FOR THE MERINGUE

Ingredients

  • 5 large egg whites
  • 250 g (9oz) caster sugar
  • 2 tsp cornflour
  • 1 tsp white wine vinegar
  • 25 g (1oz) cocoa powder, sifted, plus extra to dust

FOR THE FILLING

Ingredients

  • 300 ml (10 fl oz (½ pint)) double cream
  • 3 tbsp icing sugar
  • 350 g (12oz) blackberries, plus optional extra to serve
