NO BAKE LEMON CHEESECAKE
Serves 3 generously, or 6 when cut in half.
You’ll Need
– 12 sheets (about 5 1/2 ounces) regular or cinnamon graham crackers (Gingersnaps or amoretti would be great, too!)
– ½ cup unsalted butter, melted
– 2 – 8-ounce blocks cream cheese, softened to room temperature
– 1 – 14-ounce can sweetened condensed milk
– ½ teaspoon vanilla extract
– Zest of 2 lemons
– 2 tablespoons fresh lemon juice
