When I came across this recipe when searching on YouTube I was really impressed with how this cake looks it has that fun element about it from the rainbow colours that look so pretty and also because it is pancakes it has that delicious I want to try this recipe out aspect too.. so I just had to share this amazing recipe with you

2 cups Bisquick baking mix
1/4 cups milk
4 eggs
500 g (2 cups) yogurt, whipped cream or frosting
food colour
Combine the pancake mix, milk and eggs together. Add more milk until the batter is runny enough to flow off a spoon.
Divide batter into six equal portion, stir in enough food colour to each portion to get the desired shade.
Add a little vegetable oil to a non-stick skillet, heat to medium. Take two tablespoons of the batter and spread it evenly an into a circle in the pan. Cook until set on one side (about 30 seconds, just enough so that you can turn the pancake without tearing it).
Flip and cook for an additional 5-10 seconds on the other side.
You should be able to get 3 pancakes per colour portion.
Continue to cook the pancakes until all the colours are done.
Allow pancakes to cool.
Trim edges using a sharp knife or cut out a circle using a large round biscuit cutter if desired.
Place one pancake on a plate and spread about 1-2 tbsp of your desired filling and spread to the edges. Stack a second pancake on top and spread more filling. Continue until they are all stacked and then top with more filling and decorate with fruit if desired.
Place in the freezer for an hour to allow the filling to set.
Serve immediately.
