Ingredients
- For Filling:
- 8-10 fresh peaches, pitted and sliced
- 2 tablespoons cornstarch
- ½ cup all-purpose flour
- ½ cup butter; cold; cut into small cubes
- 1 cup light brown sugar
- 1/2 teaspoon each: ground nutmeg, cinnamon
- 1 vanilla bean
- For Pie Crust:
- 1 cup cold butter, cut into small cubes
- 2 ½ cups all-purpose flour
- 1 tablespoon sugar
- ½ teaspoon salt
- 7 to 8 tablespoons cold water (about 1/2 cup)
- For Egg Wash:
- 1 egg plus 1/3 cup water
- large sugar granules
