I was looking for a recipe for muffins that were a little bit different and I came across these gluten free lemon raspberry muffins that look so deliciously good that it was a recipe that made me stop and read it and then share it on as I though what yummy muffins that I am sure will be enjoyed by all
I love this recipe one because it is gluten free but also it has that amazing combination of lemon and raspberry , a combinations of flavours that g so well together

A gluten-free raspberry muffins flavored with almond and lemon.Ingredients
- 9 oz Fresh raspberries, rinsed
- 2½ C Gluten free flour (King Arthur brand is preferred)
- ½ tsp Xanthan gum
- 1 C Granulated sugar
- 4 tsp Baking powder
- ½ tsp Salt
- 1 Large egg
- 1 C Buttermilk or milk
- ½ C Butter (melted)
- ¼ C Sour cream
- 1 tsp Almond extract
- 1 tbsp Lemon juice (fresh squeezed)
- Zest from 1 lemon
