When it comes to cheesecakes there are many different ones to choose from with a variety of different flavours etc and even from baked to non baked.
Well with this recipe it is for a baked cherry cheesecake that is so creamy and delicious with the flavour of the cherries as there is whole pitted cherries throughout this cheesecake .

Ingredients:
2 cups plain sweet biscuits/cookies of your choice
75g butter
375g cream cheese
500g ricotta
4 eggs
2 tablespoons cornflour
2 tablespoons cold water
1 1/2 cups sugar
1 1/2 cups morello cherries/680g jar
Zest and juice of 1 lemon
Fresh cherries to decorate
Powdered/icing sugar to dust
