This is one of those recipe that you just have to try .. family or friends will love you for ever and will ask you to make it for them time and time again …happy baking
Here below is the ingredients you will need and the recipe for you to follow
Ingredients
- 14oz/ 400g can of condensed milk
- 1/2 cup of butter, cubbed and chilled
- 1 1/2 cups plain (all purpose) flour
- 4 bananas, chopped and some sliced
- 1 1/4 cups double (heavy) cream
- 1 oz / 25g dark chocolate
- For the filling .. put the can of unopened condensed milk in a pan of water so that it is covered and simmer for about 3 hours add more water if the level of water goes down so that it does not boil dry .. boil a kettle for the water so that the water temperature does not drop .. leave to cool completely once the 3 hours is up
- For the pastry.. in a bowl place the flour and the butter and rub together until it forms bread crumbs , pour some cold water into a jug and gently add some water a little at a time until the dough is pliable
- Roll out the pastry on a floured surface to fit a 23 cm /9 in round tart case , leave to chill in the fridge for about 30 mins
- In the meantime preheat your oven to 200°C / 400°F/ gas 6
- Take your pastry case out of the fridge and line it with baking parchment filled with baking beans or rice and bake the case for a about 15 mins
- Take out of the oven and remove the parchment and beans etc and bake again until golden brown
- Open your can of cooked condensed milk that now should be cooled and place the content into a bowl and beat until smooth , add the chopped banana not the sliced once you have stopped beating and fold them into the caramel
- Spoon this mixture into the pastry case and level over with the spoon
- Whip the fresh cream until it is soft peaks and it holds it shape , spoon on top of the caramel and banana mixture
- Grate the chocolate over the top of the cream and decorated with the sliced bananas before you are serving it

Banoffee lime pie by adding the zest finely grated and the juice to the cream before whipping .. or maybe coconut banoffee pie by adding 4 tbsp of desiccated coconut to the cream before whipping it .. two great alternatives
