I love choux pastry recipes especially eclairs they are one of my favourite in the form of chocolate ones so when I came across this recipe for lemon eclairs I was over the moon.
These eclairs still have that wonderful crisp choux pastry shell filled with cream but with a lemon flavour from the lemon curd and the icing is a lemon icing piped over them making this recipe just a yummy as the chocolate or toffee variety.
