A Fabulous Chocolate Whoopie Pie Recipe

 We don’t necessary bake whoopie pies in my country England so I wanted to find out a little about their history etc so here is a bit of there history that I found which is interesting so I wanted to pass it on to you guys too it is from the wikipedia.org website

A US baked good that may be considered either a cookie, pie, or cake. It is made of two round mound-shaped pieces of chocolate cake, or sometimes pumpkin or gingerbread cake, with a sweet, creamy filling or frosting sandwiched between them.

While considered a New England phenomenon and a Pennsylvania Amish tradition,they are increasingly sold throughout the United States. According to food historians, Amish women would bake these desserts (known as hucklebucks, or creamy turtles at the time) and put them in farmers’ lunch pails or lunch boxes. When farmers would find the treats in their lunch, they would shout “Whoopie!” It is thought that the original Whoopie pies may have been made from cake batter leftovers.

2 cups of All Purpose Flour
1/2 cup of Cocoa Powder
1 cup of Granulated Sugar
1/2 cup of Unsalted Butter, softened at room temperature
1 tsp of Baking Powder
1 tsp of Baking Soda
1/2 tsp of Salt
1 tsp of Instant Espresso Powder
2 Eggs
3/4 cup of Buttermilk
1 tsp of Vanilla Extract

For the Filling:
4 oz of Cream Cheese, softened at room temperature
2 Tbsp of Unsalted Butter, softened at room temperature
2 cups of Confectioner Sugar
1/4 tsp of Vanilla Extract
