  • 1 large russet potato, peeled and cubed
  • 3/4 cup granulated sugar
  • 3 tablespoons salted butter, melted
  • 3 eggs
  • 3/4 cup buttermilk
  • Canola oil
  • 3 -3 1/4 cups all-purpose flour
  • 5 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon grated nutmeg
  • 1/4-1/3 cup strong brewed coffee or espresso, cold
  • 2 teaspoons vanilla
  • 3 cups powdered sugar
