Cookies are such fun to make with the family so when I came across this crunchy peanut cookie recipe I was totally hooked they look so good that I could eat one or two right now , so this is certainly going to be on my list this weekend to make a batch of these cookies ..

Here below is a list of the ingredients you need to make these cookies along with that fantastic video tutorial to watch showing you how to make them too
INGREDIENTS
– 1 cup butter, room temperature
– 1 cup brown sugar
– 1 cup white sugar
– 2 eggs
– 2 1/3 cups flour
– 1 teaspoon baking soda
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1 teaspoon vanilla
– 1 cup oatmeal
– 1 cup cornflakes
– 1 cup peanuts (I use honey roasted)
INSTRUCTIONS
Prepare peanuts by measuring 1 cup, then chop in a food processor until coarse crumbs and set aside.
Cream butter with sugars until light and fluffy, 3 minutes.
Add eggs one at a time, mixing until incorporated after each egg.
Add vanilla and mix. The mixture may look curdled after the vanilla, but this is normal!
Sift together the flour, soda, powder and salt. Add the sifted ingredients to the mixer and mix.
Add the oatmeal, cornflakes and prepared peanut mix until everything is incorporated.
Using a cookie scoop, drop cookies onto parchment-lined cookie sheet and bake in a preheated 350 degree oven for 8-12 minutes until slightly puffed and golden brown.
Remove from oven and cool on pan for 5 minutes then completely on cooling rack.
