Here’s Sally Bee showing us how to make these delicious, French fondant fancies using marzipan and buttercream icing. These little cakes are perfect for parties and afternoon tea

  • Ingredients

  • 225g (7½oz) unsalted butter, softened
  • 225g (7½oz) golden caster sugar
  • 4 medium eggs, beaten
  • 2 tsp vanilla extract
  • 225g (7½oz) self-raising flour, sifted
  • 1-2 tbsp apricot jam
  • 200g (7oz) marzipan
  • icing sugar, for dusting

  • For the buttercream

  • 250g (8oz) unsalted butter, softened
  • 300g (10oz) icing sugar, sifted
  • 1 tsp vanilla extract
  • For the icing and decoration

  • 1 x 500g pack ready to roll white fondant icing, cut into pieces
  • red food colouring
  • yellow food colouring
  • green food colouring
  • 50g (2oz) dark chocolate, melted
