Here’s Sally Bee showing us how to make these delicious, French fondant fancies using marzipan and buttercream icing. These little cakes are perfect for parties and afternoon tea
Ingredients
- 225g (7½oz) unsalted butter, softened
- 225g (7½oz) golden caster sugar
- 4 medium eggs, beaten
- 2 tsp vanilla extract
- 225g (7½oz) self-raising flour, sifted
- 1-2 tbsp apricot jam
- 200g (7oz) marzipan
- icing sugar, for dusting
For the buttercream
- 250g (8oz) unsalted butter, softened
- 300g (10oz) icing sugar, sifted
- 1 tsp vanilla extract
For the icing and decoration
- 1 x 500g pack ready to roll white fondant icing, cut into pieces
- red food colouring
- yellow food colouring
- green food colouring
- 50g (2oz) dark chocolate, melted
