Cake Batter
- ¾ Cup Fresh Strawberries, finely diced
- 2½ Sticks (1¼ Cups) Unsalted Butter plus 1 to 2 Tablespoons
for preparing the cake pans, room temperature - 2½ Cups Granulated Sugar
- 8 Egg Whites, room temperature
- 1 Tablespoon Pure Strawberry Extract
- 5½ Teaspoons Baking Powder
- 1¼ Teaspoons Kosher Salt or 1 Teaspoon Table Salt
- 1 Cup All Purpose Flour, sifted
- 2¼ Cups Cake Flour
- 1 Cup Buttermilk, room temperature
- Red Food Coloring
White Chocolate Cream Cheese Buttercream Frosting
- 12 Ounces Premium White Chocolate Wafers (Guittard recommended) or Lindt White Chocolate Bars (white chocolate chips are not recommended for this recipe)
- 12 Ounces Cream Cheese, room temperature
- 8 Ounces Unsalted Butter, room temperature
- 1½ Teaspoons Pure Vanilla Extract
- 3½ Cups Powdered Sugar (a.k.a Confectioners Sugar)
