Amazing Looking Cinnamon Toast Crunch Cupcakes

I love to make cupcakes like most of us do I think there is nothing more satisfying then see them bake in the oven so I was so pleased when I came across this recipe for Cinnamon Toast Crunch Cupcakes they sound so good don’t they , I love cinnamon taost so I hope they have that taste but in a cupcake as I have not tried this recipe out yet.. tell me what you think?

DIRECTIONS

1. Preheat oven to 350°. Line cupcake pan with cupcake liners.

2. Prepare cake mix according to package instructions. Add cinnamon and whisk until combined.

3. Fill liners about one-third full with batter. Sprinkle cinnamon-sugar on top of the batter and place a few pieces of cereal on top. Add more batter to cover the cereal. Bake for 15-20 minutes then let cool completely.

4. Meanwhile, make frosting: In a large bowl, combined butter, powdered sugar salt, vanilla and cinnamon. Beat with a hand mixer until light and fluffy. Gradually add heavy cream, one tablespoon at a time, until creamy.

5. Frost cooled cupcakes with an offset spatula. Top each cupcake with more Cinnamon Toast Crunch, if desired.

INGREDIENTS
FOR CUPCAKES:
1 box vanilla cake mix
1 tsp. cinnamon
1/4 c. cinnamon-sugar
1 c. Cinnamon Toast Crunch
FOR FROSTING:
1/2 c. unsalted butter, softened to room temperature
3 c. powdered sugar
Pinch salt
1 tsp. vanilla
1/2 tsp. cinnamon
2-3 tbsp. heavy cream
Cinnamon Toast Crunch cereal, for garnish (optional)
