As you will know if you are a fan of our website Afternoon Baking with Grandma I love brownies and I have been told many times to try a beetroot recipe as beetroot in brownies make a richer and moist kind of brownie and that I am sure to love it once I have given it a try …
The reason for this is that I must have turned my nose up when friends have told me about beetroot brownies .. a vegetable in a brownie well I do like carrot cake so I thought it was about time I gave it a go … and guess what .. they are amazingly good ..
I found this super recipe that you need to try out too and of course by all means pass it on to others
These brownies are called the better beetroot brownies as the nutritious beetroot adds sweetness and the juice from the beets mean that you can reduce the amount of fat used, swapping the butter for rapeseed oil makes these brownies Dairy free too
This recipe with make 12 squares
Ingredients
500g/ 1lb 20z cooked beetroot( not in vinegar) peeled
100ml/31/2 fl0z rapeseed oil
3 Larege egg
200g/7oz golden caster sugar ( superfine)
2tsp vanilla extract
250g/90z good quality dark chocolate ( 70% cocoa, dairy free if you want ) melted
14g/50z plain flour ( all purpose)
75g/2 1/2 0z cocoa powder
1 tsp baking powder
50g/20z walnut pieces roughly chopped
100g/40z icing sugar ( powdered sugar)
- Heat the oven to 180C/160C fan/gas 4 , grease and line a 20x30cm traybake tin with baking parchment . Chop on third of the beetroot into small cubes and set aside. blitz the remainder to a paste in a blender or food processor or mash with a fork or potato masher, sit the paste in a sieve over a bowl when doing this and collect 1-2 tablespoons of the juice . save this for the icing and the paste mix the oil with it
- Using an electric whisk or a hand whisk beat the eggs and the sugar and the vanilla together in a large bowl until light and fluffy and tripled in size , carefully fold this into the beetroot mixture with the melted chocolate , fold in the flour , coca powder and the baking powder, then the walnuts and the chopped beetroot
- Pour the mixture into the tin and bake for about 20 -25 minutes until slightly gooey in the middle . Cool, mix enough reserved beetroot juice with the icing sugar ( powered sugar) to get a runny icing. drizzle the icing over the brownies wait until the icing as set and then cut into squares
Enjoy now with a mug of hot chocolate or latte … heaven x
