Berry Harvest Pastry Cake Recipe

A truly wonderful looking cake that has that Holiday celebration feel about it although it is plain with just the fruit on the top in the cake batter and for decoration it is a simple yet impressive looking cake

Learn how to make a Berry Harvest Cake from scratch. This pastry is a delicious fluffy cake with a light flavor, topped with sweet and tangy blueberries, blackberries, and raspberries

 

Ingredients:
7 Tablespoons Butter, Softened
1 Cup Caster Sugar
1/2 Cup Sour Cream
3 Eggs Lightly Beaten, Room Temperature
1 Teaspoon Vanilla Extract
1 1/2 Cups All Purpose Flour
2 Teaspoons Baking Powder
1-2 Cups Fresh Berries (Blackberries, Blueberries, Raspberries)
Powdered Sugar for Dusting

*Makes one 8 inch round cake.

Directions:
1. In a large bowl, cream together butter, sugar, and sour cream until light and fluffy. Drizzle in the eggs, beating only until well incorporated. Stir in the vanilla extract. Sift together flour and baking powder; fold into creamed mixture. Beat only until smooth.
2. Pour batter into a prepared 8 inch round cake pan. Smooth over top. Arrange a few berries on top, leaving space around the edges for the cake to rise. (Do not press them down.) Bake at 350 F for 35-45 minutes or until an inserted toothpick comes out clean.
3. Let stand in cake pan for 10 minutes, then remove to a wire rack. Let cool completely. Arrange more berries on top of cake as desired. Dust with powdered sugar.
