Baking Cupcakes With The Grandchildren…
I had great fun the other day baking with the Grandchildren .. I was looking after them for the day .. and they said to me “Grandma can we make some cakes “… so I look in my store cupboard and found what I was looking for .. what I like about these cakes is they are great to make on the spur of the moment baking as most of us have the ingredients in our store cupboards .. although the sweets were in the house because they were visiting
Baking with children is great fun and we had such fun making these cakes although we did get in a bit of a mess with the icing as that is the fun part for children to on their own ..

Candy Sweets Butter cream Cupcakes
Ingredients
Cupcakes
110g /4oz / 2/3 cup self raising flour, sifted
110g /4oz /1/2 cup caster sugar (superfine) sugar
110g /4oz / 1/2 cup butter, softened
2 large eggs
1/2 tsp Vanilla extract
To decorate
100g / 3 1/2 oz / 1/2 cup butter softened
200g / 7oz / 2 cups icing ( confectioner’s ) sugar
Food dye of your choice
Sweets /candy to decorate
- Prepare the oven to 190°C ( 170 °C fan ) 375F/ gas 5 and then line a 12 hole cupcake tin with paper cases
- Combine the flour, sugar, butter, eggs,cocoa powder and chocolate chips in a bowl and whisk together for about 2 minutes or until the mixture is smooth
- Divide the mixture evenly between the cake cases and then transfer to the oven and bake for 15-20 minutes
- Test them with a wooden toothpick , if it comes out clean then the cakes are cooked and are ready to come out of the oven
- Transfer the cupcakes onto a wire cooling rack to cool down
- Beat the butter until smooth, then add slowly the icing sugar and add the food dye of your choice
- Pip or spread the icing on the cakes and then decorate
