Ingredients:
8 oz bag sweetened, shredded coconut
1 batch eclairs or cream puffs
2 cups whole milk
1/2 cup sugar
5 egg yolks
1/4 cup, plus 2 tbsp cornstarch
2 tsp vanilla extract
5.46oz can coconut milk
2 tbsp spiced rum
1 cup confectioner’s sugar
1.5 tbsp milk or water
