Delicious Looking Tangy Lemon Crumb Bars

Lemon bakes are popular and I am am always looking out for new and exciting recipes for you all to try out , so how about these tangy lemon crumb bars that look heaven to me .. great to try out over the weekend

This recipe is actually a mishmash of two recipes and I’m going to consider this my creation!

Crust:
1 cup butter (softened)
1 cup brown sugar
1 1/4 cups Flour
1 tsp Baking soda
1/2 tsp Salt
1/4 cup coconut (optional, if you don’t want to use it, increase the oats by 1/4 cup).
1 cup rolled oats or quick cooking oats

Filling:
1 can (10 oz or 300ml) sweetened condensed milk
1/2 cup lemon juice (fresh or the bottled kind)
Combine the two in a small bowl and stir until combined and thickened.

Cream the sugar and butter together until light and fluffy, add in the baking soda, salt and flour and stir until combined.
Stir in the oats and coconut.
The texture should be crumbly.
Place half (or a little over half) of the crumb mixture into the bottom of a greased 8×10″ or 9×9″ baking dish. Pat down to level.
Pour lemon filling evenly over the top.
Top with remaining crumb mixture.
Bake at 350 F for about 25-35 minutes until golden brown and edges appear set when touched.
Allow to cool, cut into squares. If not consumed within a day or two, store covered in the refrigerator.
