CRUST

  • 1 1/2 cups King Arthur Unbleached All-Purpose Flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup (8 tablespoons) unsalted butter
  • 1/2 cup sugar
  • 3 large egg yolks (save the whites for the topping)

FILLING

  • 1 can (14 ounces) sweetened condensed milk
  • grated rind (zest) from 2 lemons
  • 1/2 cup fresh lemon juice

TOPPING

  • 3 large egg whites (from above)
  • 1/2 teaspoon fresh lemon juice
  • 1/2 cup sugar
