An Easy Chocolate Cupcakes Recipe

I love to make cupcakes with my Grandchildren so to find this really easy recipe is so good and they can follow the recipe too by watching this video tutorial , it gets them into baking which is great fun ..

Ingredients:
1 1/2 Cups All Purpose Flour
1/2 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1/4 Teaspoon Salt
1/2 Cup Unsweetened Cocoa Powder
3/4 Cup Granulated Sugar
1/3 Cup Vegetable Oil
2 Eggs, Room Temperature
2/3 Cup Sour Cream
1/2 Cup Water

| Makes 12 cupcakes.

Directions:
1. In one bowl, sift together flour, baking powder, baking soda, salt, and cocoa powder. Whisk together and set aside.
2. In another large bowl, beat together sugar and oil until well blended. Add in eggs and mix just until combined. Beat in the sour cream. At low speed, gradually add in the dry ingredients alternating with 1/2 cup of water.
3. Line a cupcake tin with paper liners. Fill each 2/3 full with batter. Bake at 350°F for 15-20 minutes or until an inserted toothpick comes out clean.
4. Let cupcakes cool completely before decorating.

Frosting

Ingredients:
2 oz. Baking Unsweetened Chocolate, Melted
1 Teaspoon Vanilla Extract
4 Tablespoons Butter, Softened
16 oz. Confectioner’s (Powdered) Sugar
1/4 Cup Milk

| Makes about 2 cups of frosting. Enough for 12 cupcakes.

Directions:
Beat together the melted chocolate, vanilla extract, and butter. Gradually add the sugar alternating with the milk. If the frosting is too thick or dry, add 1 teaspoon of milk at a time until you reach the desired consistency.
