I have a weakness for layered desserts. There’s just something about all those good things on top of each other that’s hard to resist.

This pie is a perfect example of the kind of dessert I love. It all starts with a simple buttery crust that’s filled with a layer of cheesecake and then topped with homemade cranberry sauce. Then, a bit of reserved crust mixture is crumbled on top. The result is a wonderfully delicious 

 

Cranberry Cheesecake Pie

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 1 hour

Yield: 8 to 10 servings

Ingredients
For the cranberry filling:
    • 8 ounces cranberries
    • 6 tablespoons granulated sugar
    • 1/2 teaspoon lemon zest
    • 1 teaspoon lemon juice
    • 1/2 cup water
For the crust:
    • 1 1/4 cups all-purpose flour
    • 1/2 cup granulated sugar
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, cold and cut into 1/2-inch cubes
For the cheesecake:
  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
