INGREDIENTS
FOR THE CUPCAKES
- 1 1/3 c. all-purpose flour
- 1 1/4 tsp. baking powder
- 1/2 tsp. kosher salt
- 6 tbsp. unsalted butter, at room temperature
- 1 c. sugar
- 1 large egg plus 1 egg white, at room temperature
- 1 1/2 tsp. vanilla extract
- 1/2 c. milk
- 1 to 2 drops yellow food coloring
- 1 to 2 drops orange food coloring
FOR THE FROSTING
- 1 c. unsalted butter, softened
- 3 to 4 c. confectioner’s sugar
- 2 to 4 tbsp. vanilla extract
- 1/2 tsp. kosher salt
- 1 drop yellow food coloring
- 1 drop orange food coloring
- Royal icing eyes, for garnish
