Lemon and ginger together is a great combination  in baking so why not try these  cupcakes .. the ginger in the cake with that lemon glaze is so good

Glazed Lemon And Ginger Cupcakes




110g /4oz / 2/3 cup self raising flour, sifted

110g /4oz /1/2 cup caster sugar (superfine) sugar

110g /4oz / 1/2 cup butter, softened

2 large eggs

1 lemon zest finely grated

1tsp ground ginger

To Decorate

200g / 7oz /2 cups icing ( confectioner’s ) sugar

1 – 2 tsp lemon juice

12 strawberries, hulled

multi coloured sprinkles


  • Prepare the oven to 190°C ( 170 °C fan ) 375F/ gas 5 and then line a 12 hole cupcake tin with paper cases
  • Combine the flour, sugar, butter, eggs, lemon zest and ground ginger in a bowl and whisk together for about 2 minutes or until the mixture is smooth
  • Divide the mixture evenly between the cake cases and then transfer to the oven and bake for 15-20 minutes
  • Test them with a wooden toothpick , if it comes out clean then the cakes are cooked and are ready to come out of the oven
  • Transfer the cupcakes onto a wire cooling rack to cool down
  • Meanwhile sieve the icing sugar into a bowl and add just enough lemon juice to make a thick spreadable icing
  • check that your cupcakes are cooled down and then spoon on the icing onto the cupcakes
  • finish of your cupcakes by decorating them with the sprinkles
