Recipe:

Sponge mixture:
– 5 egg yolk
– 5 egg white
– 2/3 cup (125 g) sugar
– 4/5 cup (125 g) cake flour
– lemon peel

Lemon cream:
– 6 tbsp lemon juice
– lemon peel (1 lemon)
– 1 cup (250 ml) water
– 1.5 tbsp (20 g) cornstarch
– 1/2 cup (100 g) sugar
– 4 sheets gelatin
– 1 cup (200 g) whipping cream

Baking:
– Baking plate with baking paper
– preheat oven right from the start
– 428°F (220°C)
– bake for about 8 minutes

 

Tips for preparation:
– Don‘t bake for too long, otherwise the pastry will break when rolled
– During oven time prepare a fresh sheet of baking paper or a kitchen towel dusted with sugar
– After baking turn the pastry upside down on the baking paper and roll them together immediately
– If lemon cream is too fluid after folding in the whipped cream put it into the fridge until it becomes firm
– Dust powdered sugar before serving
– You can freeze the roll and you also can serve it as an ice dessert.
