APPLE JAM. Unlike apple butter, apple jam is textured, chunky, thick, and doesn’t have to be spiced. In fact, this one isn’t.
The best part is that you can (and should) use a variety of apples for this. Since different apples cook and break down differently, each batch will be awesomely unique, so go ahead and experiment. A couple of Cortlands, a few Pippins, maybe a Pink Lady, who could say?
Caramel-Apple Jam
1 cup sugar
3 lbs. apples (preferably of mixed variety), peeled, cored, cut into 3/4” chunks
1 vanilla bean, split lengthwise, seeds scraped (optional)
1 Tbsp. fresh lemon juice
