I love cupcakes they are that little indulgence that we all seem to love so much so when I came across new recipes I get really excited and want to make them and share the recipe so here for you to try out is a raspberry lemonade cupcake recipe that looks so deliciously good

These raspberry lemonade cupcakes are the perfect tangy addition to any party. Packed full of raspberries, with a tangy punch of lemon! :0) x

 

Makes 20

 

429g  all-purpose flour

265g  caster (superfine) sugar

1/2 tsp salt

3 tsp baking powder

375ml (1 1/2 cups) of fizzy lemonade

125ml vegetable oil

125g butter

2 tbsp Greek yogurt (can some substitute with sour cream)

1 tsp vanilla extract

2 large eggs

1 tsp citric acid (to sprinkle)

500g frozen raspberries

1 cup crushed freeze dried raspberries

1 tsp lemon essence

5 drops yellow food dye

Zest of 1 lemon

Frosting

1 batch of fluffy buttercream frosting

1 tsp lemon essence
