This special recipe comes from Sarah Youngers of Youngers Dairy Farm in Arcade, New York. It’s part of our farmer recipe collection as we celebrate June Dairy Month.

I have become famous for this delicious treat. I usually make about 20 of these for the country store at our annual church lawn fete and people request them ahead of time. I learned to make these from a very dear friend who has since passed away from cancer and so whenever I make them I feel a special connection to her.

Danish Puffs

Yield: 1 puff

Ingredients
For Danish:
    • 1 pound (4 sticks) butter
    • 4 cups flour, divided
    • water
    • 2 teaspoons almond extract
    • 6 eggs
For frosting:
  • 2 pounds confectioners’ sugar
  • 1 ½ teaspoon almond extract
  • 1 cup (2 sticks) butter
  • milk
