1/3 cup butter-flavored solid vegetable shortening
3 to 4 tablespoons ice water
Lemon curd:
4 large eggs

½ cup lemon juice
1 pinch kosher salt
½ cup (1 stick) butter
Pastry cream:
4 large egg yolks
½ cup granulated sugar
¼ cup cornstarch
¼ teaspoon kosher salt

1 teaspoon pure vanilla extract

Blueberry topping and whipped cream:
1 pint fresh blueberries, washed, stems removed
½ cup granulated sugar
3 tablespoons cornstarch
¼ teaspoon lemon zest
1 cup heavy whipping cream
¼ cup powdered sugar or to taste
1 teaspoon pure vanilla extract, or to taste
