Love These Creme Brûlée Lemon Bars

When I came across these lemon bars I just had to share this recipe with you , lemon desserts are popular as I have found so I just thought you may like to have a go at making these Creme Brûlée Lemon Bars .. great for that special tea party I think

INGREDIENTS:
Crust
½ cup (120g) of butter, softened
1 cup (120g) of flour
¼ cup (50g) of sugar

Substitute Crust
3 cups (120g) of vanilla wafers, minced
1/3 cup (45g) of pine nuts, minced
1/2 cup (120g) of butter, melted

Mixture
4 eggs
2 cup (400g) of sugar
1/2 cup (120mL) of lemon juice
1/4 cup (60mL) of flour

DIRECTIONS:
In your mixture, add your softened butter and sugar and mix well. Then slowly add in your flour until it becomes a dough. Make sure to scrape down the sides of the bowl while mixing, to make sure everything is combined

Line your 8×8 (or 7×9 etc) baking pan with parchment paper and add in your dough. Push down on your dough, filling in all the corners, and leveling it out. Bake for 25 minutes on 350F degrees

Next make your mixture. Add in your eggs and sugar and mix well together, add in your lemon juice, and flour and mix well again. Make sure to scrape down the side of your bowl. Let it sit for ten minutes and then give it another good mix before adding it to your baked crust. Bake for another 20-25 minutes.
Let cool before slicing.
