S’Mores Bars

¾ cup butter, softened
2/3 cup sugar
1 egg
1 teaspoon vanilla extract
3 cups graham cracker crumbs
½ cup all-purpose flour
½ teaspoon salt
(7) 1.55-ounce Hershey’s milk chocolate bars
1 egg white (yolk is not used in this recipe)
3 ½ cups miniature marshmallows
cooking oil spray (optional)

In a large bowl, mix butter and sugar together using electric mixer on medium speed. Beat until light and fluffy. Add egg and vanilla. Beat well. Stir in graham cracker crumbs, flour, and salt. Reserve 2 cups of this graham cracker mixture and set aside for later use. Press the remaining graham cracker mixture into a 13-inch by 9-inch by 2-inch Pyrex baking dish. (You may spray the dish with cooking oil spray, if desired.) Place a single layer of chocolate bars on top of the graham cracker crumb crust. In a fresh bowl, beat egg white until foamy. Stir in marshmallows. Spread on top of chocolate bars. Press the 2 cups of reserved graham cracker crumb mix on top of marshmallows. Bake at 350 degrees (F) for 20 to 30 minutes, until marshmallows are puffed and golden. Remove from oven and cool on cooling rack for 10 to 20 minutes. Cut into bars and place on a nice serving plate. Serve warm, if possible. These may be covered and stored in the refrigerator. They are great when placed in the microwave for about 15 seconds!
