A Good Fruit Cake …
There is nothing quite like a good fruit cake to have with that cup of tea in the afternoon … it often reminds me of my Nan who would make the most wonderful fruit cake with almonds on the top so when I came across this recipe fond memories came flooding back
Over the years recipes have been lost that my Nan gave me so I have been search for ones that are similar
Fruit And Almond Loaf Cake
This cake will serve 8 people
Ingredients
225g/80z/1 1/2 cup of self raising flour
100 g/3 1/2 0z /1/2 cup butter , cubed
85g/30z/1/3 cup caster sugar ( superfine)
150g/51/2 0z/3/4 cup mixed dried fruit
1 large egg
75ml/2 1/2 fl.0z/1/3 cup milk
75g/21/2 0z/1 cup blanched almonds
Method
- Preheat the oven t 180°C ( 160°C fan)/ 355F/gas 4 and liner a loaf tin with non-stick baking paper
- Sieve the flour into a mixing bowl and rub in the butter until it resembles fine breadcrumbs then stir in the sugar and dried fruit . Lightly beat the egg with the milk and stir it into the dry ingredients until just combined
- Scape the mixture into the loaf tin and sprinkle over the almonds . Bake for 55 minutes or until a skewer inserted in the centre comes out clean. Transfer the cake to a wire rack and leave to cool completely
