I really love muffins and lemon pound cake so when I found this recipe to have the two together it was one that I had to save and share with you fellow bakers as I think these muffins look so good with that frosting and the soft moist muffin
These muffins can be made with or with out the poppy seeds the choice is up to you , I personally would leave them in

These sweet little lemon muffins are moist and flavorful. Delicious with or without poppy seeds.
Yield: 24 mini muffins, or 12 standard sized muffins
ingredients:
1 3/4 cups flour
1/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon poppy seeds (optional)
1/2 cup unsalted butter, softened
1 cup Tate+Lyle® Organic Pure Cane Sugar
2 eggs
1/2 cup sour cream (any fat content)
1 teaspoon vanilla extract
1/2 teaspoon lemon extract
zest of 1 lemon (about 1 teaspoon)Glaze-
