I love shortbread not just making it but of course eating it too with my family and friends … so here for you is a great recipe that I often make this recipe it is a easy recipe to make that looks so deliciously good , crumbly short sweet cookies that are so good and with the added lime it gives these cookies that extra wonderful flavour
Ingredients
- 125g/4oz butter
- 55g/2oz caster sugar, plus extra to finish
- 180g/6oz plain flour
- I lime .. zest and juice
- powered sugar or superfine sugar .. it is up to you
Method

Heat your oven to 190C/375F/Gas 5.

Beat the butter and the sugar together until smooth , add the zest of the lime a a small amount of the juice

Stir in the flour to get a smooth paste. Turn on to a work surface and gently roll out until the paste is 1cm/½in thick.

Cut into rounds, fingers or what ever shape you wish and place onto a baking tray. chill in the fridge for 20 minutes.

Bake in the oven for 15-20 minutes, or until pale golden-brown. Set aside to cool on a wire rack. dust with either super fine sugar or icing sugar ( powered sugar )
- If you prefer you could make up a icing by mixing the powered sugar with some lime juice to a spreading consistence and then decorate the top of the shortbread cookies
