Our chewy, saucer-size cookie is delicious by itself, but for a warm-weather treat, it makes generous ice cream sandwiches when filled with tiny scoops of vanilla and chocolate ice cream.

  • 1 pint vanilla ice cream
  • 1 pint chocolate ice cream
  • 3/4 cup peanut butter
  • 1/2 cup butter
  • 3/4 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/4 cups all-purpose flour
  • 2 1/2 cups regular rolled oats
  • 1 1/2 cups raisins and/or semisweet chocolate pieces
