We swapped traditional meringue for a jar of marshmallow fluff in these tropical-flavored pies. The toasted coconut flakes are awfully pretty but you could use toasted sweetened coconut in its place. For the easiest garnish, simply zest a lime over top just before serving.


  1. cup granulated sugar
  2. cup (2 sticks) plus 6 Tbsp. unsalted butter, softened, divided
  3. large eggs
  4. large egg yolks
  5. ⅔ cup fresh lime juice (from 3 to 4 limes)
  6. cups all-purpose flour, plus more for work surface
  7. ½ cup powdered sugar
  8. tablespoons cornstarch
  9. ½ teaspoon kosher salt
