Manchester tart is a classic recipe that reminds me so much of my junior school days when we had it for pudding as part of school dinners , I always looked forward to it being on the menu every week as I am sure so did a lot of other children at the time
It is one of those tarts that have wonderful layers that complement one another so well from the pastry crust to the jam layer and then the custard layer on top that is then sprinkled with coconut , it is a really easy pudding to make but has that wonderful sweet creamy texture that we all loved as a child a still do today .
