INGREDIENTS
- COOKIES
- 1 cup soft butter
- 1 cup confectioner’s sugar
- 1 egg
- 1 tsp vanilla
- 3 cups plain flour
- pinch of salt
- FROSTING
- 1 3/4 cups / 10oz Ghirardelli® 60% Cacao Bittersweet Chocolate Baking Chips, melted
- 1 cups Ghirardelli ® Peppermint Bark (baking bars or SQUARES) crushed into small bits
- Sprinkles to decorate!
DIRECTIONS
1. Heat your oven to 375°.
2. To make the cookies place all the cookie ingredients into a food mixer or in a bowl and mix them together until the ingredients come together in a large lumps , it should start to form a ball , if using your hands it is just like making pastry so you rub together the flour and butter then add the rest of the ingredients bringing it all together with your hands.
3. Once made wrap the dough in plastic/cling wrap and chill in the fridge for 1 hour.
4. After it has been chilled and is firm to touch , take some flour and lightly flour a work surface and your rolling pin, now taking the dough cut it into half and then refrigerate the half you don’t need at the moment whilst you roll out the first half of the dough , this keeps the dough from being to hot and soft
5 .Now roll out your first half of cookie dough until it is about ½ cm thick, cut out with with your Christmas shapes.
6. If you are planning on making your cookies a hang tree cookie then you will need to make a hole in the top of the shape, using a chopstick.
7. Now place all of your cookies carefully onto a non-stick baking sheet , you can do this with a palette knife and bake in the oven for 7 – 8 minutes.
8. Now you can roll out the other cookie dough in the refrigerator the same way
9. Once all your cookies are baked to a golden brown leave them to cool on the baking sheet for 2 minutes then transfer them onto a wire rack to cool.
10. For your frosting, take the chocolate baking chips and melt them over a pan of bowl of hot water or microwave them on a low setting until melted, now coat your cooled cookies on one side.
11. While the chocolate is still wet sprinkle with the crushed Peppermint Bark and sparkles.Leave Your cookies to set before tying on the ribbon and now your cookies are ready to hang on your Christmas Tree.
