Red Velvet Cupcakes

There is nothing quite like red velvet cupcakes they are so delicious and easy to make .. I know that they are a favourite cupcake in our house

Red Velvet Cupcakes

Ingredients 

Cupcakes 

110g /4oz / 2/3 cup self raising flour, sifted

110g /4oz /1/2 cup caster sugar (superfine) sugar

110g /4oz / 1/2 cup butter, softened

2 large eggs

1tsp ground cinnamon

1 tbsp red food dye

To Decorate

110g/ 4oz / 1/2 cup butter cream cheese

55g / 2oz /1/4 cup butter softened

110g/ 4oz/ 1 cup icing ( confectioner’s ) sugar

2 tsp vanilla extract

Grated chocolate for decoration and curls

  • Prepare the oven to 190°C ( 170 °C fan ) 375F/ gas 5 and then line a 12 hole cupcake tin with paper cases
  • Combine the flour, sugar, butter, eggs, cinnamon and the food dye in a bowl and whisk together for about 2 minutes or until the mixture is smooth
  • Divide the mixture evenly between the cake cases and then transfer to the oven and bake for 15-20 minutes
  • Test them with a wooden toothpick , if it comes out clean then the cakes are cooked and are ready to come out of the oven
  • Transfer the cupcakes onto a wire cooling rack to cool down
  • Meanwhile beat together the cream cheese and the butter in a bowl  until light and fluffy then beat in the icing sugar ( confectioner’s) sugar  a little at a time until your frosting is smooth
  • check that your cupcakes are cooled down place the frosting into a piping bag and pipe it onto your cupcakes a star nozzle is usually the best here
  • finish of your cupcakes by decorating them with the grated chocolate you may wish to make chocolate curls also
