Strawberry Lemonade Cake Mix Bars

What great bars to make that are so easy too as you use a cake mix .. I think these bars will be great to make over a weekend when you can sit and enjoy this bake together

 

The combination of the strawberry and lemon make a great dessert .. so I certainly will be giving this recipe a go every soon as I am sure my family will love them .. I hope your does too … happy baking

Base ingredients:
1 regular sized strawberry cake mix
1/2 cup butter at room temperature
1 egg, beaten

Top layer and frosting ingredients:
3 cups powdered/confectioner’s/icing sugar
4 tbsp butter at room temperature
lemon juice (I used about 3 tbsp)
A few drops of yellow food colour if desired
1-8oz package of happy cream cheese at room temperature
2 eggs

Combine cake mix with butter and egg until combined and press into the bottom of a 9×13″ baking dish that had been WELL greased. Better yet, line with aluminum foil and grease the foil too (or use parchment paper).
Set aside.

In a large bowl, blend together icing sugar and butter until crumbly, blend in enough lemon juice to make a THICK frosting consistency.
Blend in the cream cheese and a few drops of yellow food colour until you get the desired colour.
Remove 1 cup of this mixture and set it aside (this will be frosting).

To the remaining mixture in the big bowl, add in the 2 eggs and beat until combined. I added additional food colour at this point, but that is completely optional.
Pour this over the crust layer and bake at 350F for about 25-30 minutes until edges are brown. It may puff up like a soufle and then will fall after it comes out of the oven, this is normal.

Allow to cool completely and then frost with the remaining 1 cup frosting you set aside.
