Strawberry Sweetie Cupcakes

I really love these cupcakes they give me joy every time make them .. this recipe is one that my Grandchildren Love to make with me so I just had to share it on to you all so that you can enjoy making them too

Strawberry Sweetie Cupcakes

Ingredients 

Cupcakes 

110g /4oz / 2/3 cup self raising flour, sifted

110g /4oz /1/2 cup caster sugar (superfine) sugar

110g /4oz / 1/2 cup butter, softened

2 large eggs

To Decorate

100g/ 3 1/2 oz / 1/2 cup butter , softened

200g / 7oz /2 cups icing ( confectioner’s ) sugar

2 tbsp strawberry syrup

12 strawberries, hulled

candy sweets to decorate of your choice

 

  • Prepare the oven to 190°C ( 170 °C fan ) 375F/ gas 5 and then line a 12 hole cupcake tin with paper cases
  • Combine the flour, sugar, butter and the eggs in a bowl and whisk together for about 2 minutes or until the mixture is smooth
  • Divide the mixture evenly between the cake cases and then transfer to the oven and bake for 15-20 minutes
  • Test them with a wooden toothpick , if it comes out clean then the cakes are cooked and are ready to come out of the oven
  • Transfer the cupcakes onto a wire cooling rack to cool down
  • Meanwhile place the butter for the frosting in a bowl and beat , gradually add the icing sugar ( confectioner’s) sugar and the strawberry syrup beat until your frosting is smooth
  • check that your cupcakes are cooled down place the frosting into a piping bag and pipe it onto your cupcakes a star nozzle is usually the best here
  • finish of your cupcakes by decorating them with the candy sweets
