VEGAN STRAWBERRY THUMBPRINT COOKIES
Makes 12 cookiesDry Ingredients
1 cup all-purpose white flour
1/2 teaspoon baking powder
1/2 teaspoon baking sodaWet Ingredients
1/4 cup + 1 tablespoon coconut oil (or vegan margarine) at room temperature
1/4 cup sugar
4 tablespoons corn syrup (or any other thick syrup such as brown rice or agave)
1 tablespoon water
1/2 teaspoon vanilla extract
1/2 – 1 teaspoon freshly grated lemon zestFilling
2 – 3 tablespoons strawberry jam (or use your favourite kind)
