These healthy brownies ingredients have more nutritious alternatives. Instead of flour, ground oats were used. No butter and eggs were added; however, Greek yogurt will still make these brownies moist and delicious.
Serve them with your family and friends with a mug of latte or hot chocolate.
Ingredients for Healthy Brownies
1 1/2 cups dark chocolate chips, separated
6 tablespoons coconut oil
1 cup vanilla Greek yogurt
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup coconut sugar
3/4 cup oat flour (measured after processing)
Optional Frosting:
1/2 cup dark chocolate chips
2 tablespoons unsweetened vanilla almond milk
2 tablespoons vanilla Greek yogurt
1 1/4 cup powdered sugar
How to Make Healthy Brownies
Line an 8×8 inch pan with aluminum foil and grease with cooking spray. Preheat the oven to 350°F.
Microwave 1 cup of chocolate chips and coconut oil for 30 seconds interval, stirring in between. When the chocolate has melted, add the Greek yogurt and whisk until well-combined. Add vanilla extract, salt, baking soda, and sugar. Whisk again until incorporated.
Put oats in a blender or food processor, and pulse until you reach the flour consistency. Measure 3/4 cup and add in the chocolate mixture together with the remaining 1/2 cup of chocolate chips. Mix well.
Pour the mixture into the prepared pan and bake for 28-32 minutes or until a toothpick inserted comes out clean. Remove from the oven and cool completely.
In the meantime, combine the chocolate chips and almond milk. Microwave for 15 seconds interval, stirring in between until melted. Add yogurt and whisk until combined. Gradually add the powdered sugar while continuously stirring. Once combined, chill the frosting for about 30 minutes, or it has thickened.
Using a spatula, spread the frosting on the brownies. Cut into squares before serving.
