Raisin spiced cookies are delicious. Made with a unique combination of spices, these tasty little treats have a distinctive taste which is out of this world. I first encountered these cookies many years ago while boarding with some friends. Years later, I was able to track down my friend and get the recipe.
There are a few tips to baking the cookies. First, boil the raisins to the point where there is about 3 tablespoons of water left. It the water completely boils out, the mixture will be too dry. Try to use a fairly good quality raisin in the recipe, as the raisin is on of the main stars of the show. If you don’t have ground cloves, you can leave them out. They do add a rather distinctive taste, however. All ovens vary, but 15 minutes at 375 should suffice. These are a very soft, just about gooey, cookie. If you want them a little harder, you can leave them in the oven slightly longer. Lastly, make sure you leave the raisin spiced cooked on a wire rack to dry completely as they have to set.
1 cup of raisins 1 cup of water 1 cup of brown sugar 1/2 cup of white granulated sugar 1 egg 1/2 tsp of salt 1/4 tsp of ground cloves 1/2 tsp of cinnamon 1/2 tsp of allspice, 1/2 tsp of baking soda 1/2 tsp of baking powder 1 3/4 cups of all purpose flour
