What yummy looking sandwich cookies that will be just perfect for all you chocolate fans, I was looking for some different types of cookies recipe to share with you and I found this amazing chocolate cookies that I am sure will be a massive hit with everyone

These two wonderful chocolate cookies sandwiched together with a  rich chocolate ganache, well that sounds like heaven to me .. great to make a batch or two and share with family or friends over that hot chocolate

Prepare to abandon all restraint when you try one of these cookies made with melted chocolate and chocolate chips and layered with a chocolate ganache filling.

COOKIES

10 ounce bittersweet chocolate, chopped

3 ounces unsweetened chocolate, chopped

1/4 cup unsalted butter, cut into chunks

3 large eggs, at room temperature

1 cup plus 2 tbsp. sugar

1 tablespoon instant espresso powder

2 teaspoons vanilla extract

6 tablespoons flour

3/4 teaspoon baking powder

1/4 teaspoon kosher salt

1 1/2 cups bittersweet chocolate chips

1 cup finely chopped toasted pecans

GANACHE

6 ounces bittersweet chocolate, chopped

3/4 cup heavy whipping cream
